When creating the bars, Master Chocolatier Christopher Curtin was inspired by the symbiotic relationships found in nature and their incredible interdependency. “I never heard flavors and flavor profiles be described as symbiotic before, yet it seems like a fitting way to describe what happens with complete flavors and flavor profiles. With its parallel lines, each bar also has a migrating flavor profile as you experience it. The flavor profile has an ebb and flow, again very much like you would find in nature.” Parallel Bars pair classic culinary flavors to create what Christopher describes as his modernist approach to a chocolate bar.
“It’s the combination of curiosity, travel, and technique with a small amount of rebellion to create something that expands what people think of a chocolate bar,” Christopher notes. “Whenever I travel, it seems that I always find my way into other kitchens, whether I’m in the United States or overseas. It’s always nice to have like-minded chefs around. Japanese chefs continue to be an amazing influence, as the ingredients and the technique they use can be at times so different.” Inspired by those experiences and by the flavors that notoriously work well together, Parallel Bars are an infusion of ideas with one goal in mind: to drive home the idea that two classic flavors can excel on their own while still paired together.
The five sumptuous flavor combinations are:
- Allspice & Sesame Seed, an interplay of East Meets West with sensuous Jamaican allspice and earthy sesame seeds
- Coffee & Cardamom, a tantalizing marriage of dark roasted coffee and pungent cardamom, evocative of the Middle East
- Green Tea & Roasted Rice, a classically Asian-inspired pairing of ingredients often brewed together in Japanese genmaicha (brown rice tea)
- Porcini & Thyme, a showcase of the bright, fresh flavor of thyme in tandem with the soulful earthiness of mushroom
- Zuta & Orange, an uninhibited, fragrant journey to the Mediterranean with the sunny flavors of mint and citrus
